This recipe of dal tadka is that we make everyday at home. The generous use of ghee (clarified butter) make it a real tasty.  Dal tadka and dal fry are two different dal preparations that we find in restaurant. For dal tadka a tarka of cumin & rapeseed with dry red chili is prepared separately and poured on top of dal. But in dal fry they don’t do that.  This dal preparation goes really well with jeera rice, steamed rice or any kind of pulao.

Ingredients required to make dal tadka
 toor dal, mung dal & masur dal  -  100 gms
Oil – one tbsp
Hing (Asafoetida) – two pinch
Turmeric powder – ½ tsp
Coriander powder – one tsp
Salt – to taste
Red chilli powder – as per your taste
Dry red chilli  - two
Jeera (Cumin Seeds) – ½ tsp
chopped onions - one
chopped tomatoes - two
chopped garlic and ginger
Curry Leaves –  10 to 12
Chopped Green Chilli -  two
Garlic cloves -  15 to 20

Making of Dal tadka (Regular)

Boiling of Dal - Let us first boil the daal in pressure cooker. I have  rinse  dal in water for 2-3 times. Take the daal in pressure cooker.   Add  half tsp of turmeric powder (haldi) and one tsp salt as required for daal in pressure cooker.  Pressure cook the daal for 5 whistles until dal are cooked nicely.

Making of Onion tomato Gravy -Daal is boiled so let us make the onion tomato gravy for dal tadka. First heat the oil in a non-stick pan of kadahi.  Once the oil heat,  add half tsp of cumin seeds and two pinch of asafoetida (Hing). When cumin seeds turn light red then add  one chopped onion, two dry red chilli, chopped two green chilli and 10-12 curry leaves. Sauté for two minutes till onion turn to soft and then add crushed ginger. Cook till raw flavour of ginger is gone. Then add turmeric powder, coriander powder, red chili powder and kashmiri lal mirch. Saute for few seconds and then add  one chopped tomato.   Mix with spices and Cook tomatoes for 2 minutes until they softens. Add two tbsp of water and cover the kadahi with plate of lid. Cook for 2-3 minutes of low medium heat.

Dal Tadka in Gravy - Open the pressure cooker and check the dal that it’s well cooked or not. Mix the dal with spoon or phirni(Jherni).  Pour the pressure cooked daal along with the water into onion tomato gravy and mix well.  If required add a little water and let daal comes to boil. Simmer the dal for a minute. Give a good stir and mix well.  Daal is ready now to serve along with steamed rice. However we will add a tadka of  cumin seed,rapeseed and chilli powder on top.

Tadka prepration for dal - For tadka, heat ghee in a tadka pan. Once ghee melts add  cumin seeds (jeera) and rapeseed(rai) in the tadka and also add some kashmiri lal mirch also.  let them flutters.

Pour the tadka on cooked daal. Dal tadka is ready to serve. Serve dal tadka along with roti,naan, chapati  and rice
